Here's an overview of what you can hide:
Header ("Settings", "Sign out", etc.)
Footer (Memory usage, last activity, etc.)
Chat
Invite
Ads (When reading e-mail.)
"Search the Web" button.
The entire row of both top and bottom buttons.
The individual buttons in both top and bottom rows.
Check out the website for additional info and a few minor bugs to work around.
Edit: It's still installable from the official Apple Safari Extensions repository, but the extension no longer works (likely due to significant changes in GMail, and I don't think the dev is maintaining this anymore).
